Chocolate Bread
Ingredients
- Butter 15g/0.5oz
- Sugar 20g/0.7oz
- High gluten flour 190g/6.7oz
- Fresh yeast 5g/0.2g
- A water 60g/2.1oz
- Salt 2g/0.1oz
- Cocoa powder 10g/0.4oz
- Light cream 40g/1.4oz
- Condensed milk 15g/0.5oz
- B water 25g/0.9oz
- Heat-resistant chocolate beans 50g/1.8oz
Steps to make
① Add the cocoa powder to the water B and stir well. Pour the rest of the ingredients, except the butter, into the cooker and mix well on low speed without any dry flour.
② Beat on medium speed until the dough is smooth and extended, then add the butter and mix well on low speed.
③ Beat on medium-high speed until the dough is smooth enough to pull out a glove film. The dough temperature should be 26°C.
④ Place the dough in a clean container, cover with cling film and place in the oven to rise for 60 minutes at an ambient temperature of 27°C and a humidity of 80°C.
⑤ Place the dough on a rolling mat, pat it down, divide it into 9 equal portions, roll it out, dip it in chocolate beans and place it in a mould.
⑥ Let rise for 60 minutes at 35°C and 75°C. Spray the surface of the dough. Preheat the oven five minutes in advance at 190°C. Bake for 20 minutes. Bake for 20 minutes, cover immediately with tin foil. Remove from the oven, shake and allow to cool before eating.
